LEMON BROCCOLI WITH ROASTED
GARLIC
 
1 small whole head garlic
Pam
3 tbsp. lemon juice
8 c. fresh broccoli florets (about 1 1/2 lbs.)
2 tsp. grated lemon rind

Remove outer covering on garlic. Do not peel or separate cloves. Wrap garlic in aluminum foil coated with Pam. Bake at 325 degrees for 1 hour. Let cool 10 minutes. Separate cloves and squeeze to extract pulp. Discard skins.

Position knife blade in food processor bowl and add garlic pulp and lemon juice. Process until well blended.

Arrange broccoli in a vegetable streamer over boiling water. Cover and cook 5 minutes or until crisp-tender.

Combine broccoli and garlic mixture in a bowl and toss gently to coat. Sprinkle with lemon rind.
