CRAZY CRUST PIE 
1 c. all-purpose flour
2 tbsp. sugar
1 tsp. baking powder
1/2 tsp. salt
3/4 c. water
2/3 c. solid shortening
1 egg

No need to sift flour. In small bowl combine flour, sugar, baking powder, salt, water, shortening and egg. Blend well with mixer at lowest speed. Beat 2 minutes at medium speed.

Spread batter into 10-inch deep pie pan. Carefully spoon filling into center. Do not stir. Bake at 425 degrees for 40-50 minutes until crust is golden brown.

FILLINGS SUGGESTED:

Use cherry pie filling only.

Combine 1 can apple pie filling, 1 tablespoon lemon juice and 1/2 teaspoon cinnamon.

Combine 1 (1 pound 5 ounce) can mincemeat pie filling, 1 tablespoon lemon juice, and 1/2 teaspoon cinnamon.

Combine 1 (1 pound) can cooked pumpkin, 3/4 cup sugar, 1/2 teaspoon salt, 1/2 teaspoon cinnamon, 1 (5 1/3 ounce) can evaporated milk and 1 egg. Use rotary beater and mix well.
