WACKY CAKE 
This cake is so easy and fun to make that you'll be tempted to save on dishes by preparing it in a disposable 8 or 9-inch square pan so that you can make it more often.

There are no mixing bowls to worry about, since the cake is mixed directly in the pan.

1 1/2 cups all-purpose flour
1 cup sugar
1/4 cup cocoa
1/2 teaspoon salt
1 tsp. baking soda
1 teaspoon vanilla
1 tablespoon white vinegar
1/3 cup vegetable, peanut or light olive oil
1 cup cold water, milk or chocolate milk

Preheat oven to 350°F.

Grease the pan well with Crisco or vegetable shortening.

Measure the flour, sugar, cocoa, salt and baking soda into the pan. Using a fork or whisk, stir all ingredients until no streaks remain and everything is well combined.

Scoop out three holes or valleys in the flour mixture. Pour the vinegar into the first hole; the vanilla into the second hole, and the oil into the third. Sometimes I add a pinch of Jamaican allspice and a few drops of rum.

Pour the water or milk over everything and stir with a fork or whisk until everything is well blended. Don't forget to stir in the corners of the pan and the edges!

Bake 35-40 minutes. Cool 5 minutes and cut into squares.

Serve while still warm with ice cream or whipped cream to top it off. Or simply brush with melted butter. A drizzle of melted chocolste can dress up this cake for unexpected guests.

As quick and simple to prepare as a mix, but much more economical and without the long list of chemical ingredients, this recipe has been a "Keeper" since the 1940's. I had a sweet tooth when I found this recipe. Sounded easy so I jumped in feet first. We don't have ANY sugar in the house. I substituted brown sugar, threw in a few broken walnuts and hoped for the best. I added a light glaze after baking. It was delicious. I doubt if this recipe could go wrong no matter how ill prepared I was.

I accidentally used corn masa instead of flour, being the horrible chef that I am, and actually, it tastes great! I dusted it with powdered sugar, and it's like a brownie or chocolate bread. I can't believe myself.

I've been making this cake since I was about 5 years old (and that's a long time!). It's always the first recipe I use when teaching nieces & nephews to cook and is always a hit. I've done this using strong black coffee instead of water. Mocha cake!

That's funny... I made this exact cake years ago.. Called it crazy chocolate cake, since that's what the name was.. You know, guess they decided to switch up the name. Ha ha. Yummy... Huh?

I too made this in Home Ec in the 70s. We put maybe 10 chocolate mint patties on it after we took it out of the oven. After a few minutes they were melted enough to be spread over the cake as a chocolate mint frosting. So much fun!

My mother-in-law gave me this recipe about 45 years ago. I have always made it for my 2 daughters birthdays, now they are grown with their own families, but I intend to give them a treat this week-end, as their b'days have just passed. What an awesome surprise it will be. oh yes, we always made a buttercream frosting for it, delish!!!!

This recipe is even more amazing if you use cold coffee instead of water. My great great grandmother used to make this back in the Great Depression and used the leftover coffee from breakfast.
