RHUBARB BREAD 
1 1/2 c. brown sugar, packed
2/3 c. salad oil
2 eggs
1 c. buttermilk
1/2 c. chopped nuts
1 tsp. salt
1 tsp. baking soda
2 1/2 c. flour
2 c. rhubarb, chopped

Mix sugar, oil, eggs, buttermilk. Add sifted dry ingredients and add rhubarb. Sprinkle with cinnamon and sugar before baking. Bake at 325 degrees for 1 hour. Makes 3 small loaves.
