PUMPKIN CAKE BARS 
2 c. flour
1 2/3 c. sugar
2 tsp. cinnamon
1 (16 oz.) can pumpkin
4 eggs
1 c. oil or 2/3 c. oil
2 tsp. baking powder
1 tsp. salt
1 tsp. baking soda
1/2 tsp. lemon extract

Beat together eggs, sugar, and pumpkin. Add oil and lemon extract. Add dry ingredients and pour into 9 x 13 inch ungreased pan. Bake 25 minutes at 350 degrees; cool and frost with cream cheese icing.

CREAM CHEESE ICING:

1/4 c. butter
3 oz. cream cheese
1/2 box confectioners' sugar
1 tsp. vanilla
Chopped nuts on top
