ZUCCHINI TOMATO MEDLEY 
2 tbsp. butter
3 med. zucchini, sliced
1/3 c. chopped onion
2 med. tomatoes, peeled, cut into wedges
1/2 tsp. basil leaves
1/2 tsp. salt
1/8 tsp. pepper

Melt butter in large skillet. Add zucchini and onion; cook and stir over medium-high heat until crisp tender. Add tomatoes, basil, salt and pepper; cook until tomatoes are hot. 8 (1/2 cup) servings.
