ITALIAN MEAT LOAF 
1 lb. lean ground beef
1 lb. mild or hot Italian sausage, casings removed
2 tbsp. chopped fresh rosemary or 1 tsp. dried rosemary
1 clove garlic, peeled and chopped
1 med. onion, chopped coarsely
1 (14 1/2 oz.) can peeled tomatoes, drained
1/2 c. giardiniera, drained
2 eggs
1 c. dried bread crumbs
1 c. dry oatmeal

(Mixed pickled garden vegetables, available at specialty food stores).

1. Place beef and sausage in a large bowl.

2. In the work bowl of a food processor, with steel blade in place, combine the rosemary, garlic, onion, tomatoes, pickled vegetables and eggs. Process for only a few seconds so small pieces of vegetables remain.

3. Pour over beef and sausage, then add bread crumbs.

4. Using your hands, combine all ingredients well. Pack down firmly into a 9 x 5 inch loaf pan.

5. Bake in a preheated oven at 350 degrees for 1 1/2 hours, draining fat from pan about every 30 minutes.

6. Cool in pan for a few minutes before transferring to a serving platter. 8 servings.
