SWEET POTATO CAKE | |
CAKE: 1 c. shortening 3 eggs 3 c. cake flour 3 tsp. baking powder 1 tsp. vanilla 1/2 c. milk 1 box light brown sugar 1 tsp. cinnamon 1 c. baked and mashed sweet potato Cream shortening and sugar, add eggs and sweet potatoes. Sift cinnamon and baking powder with flour, add to mixture. Add milk and vanilla and mix well. Bake in three 8 or 9 inch greased and floured cake pan. Bake at 350 degrees for 30 minutes. ICING: 1 c. evaporated milk 1/4 c. chopped peanuts 1 c. sugar 3 egg yolks 1/2 c. coconut Cook sugar, egg yolks, butter and milk over low heat for about 12 minutes, stirring constantly. Remove from heat. Add nuts and coconut. Stir until thick enough to spread. Frost cake. |
