STAINED-GLASS STAR COOKIES 
1 c. (each) butter, uncooked oatmeal
3/4 c. (each) sugar, finely chopped pecans
1 egg
1 tsp. vanilla or almond
2 3/4 c. flour
1/2 tsp. salt
3 to 4 kinds of jams, jellies or preserves

Cream together butter and sugar until light and fluffy; blend in egg and flavoring. Mix in flour and salt, then oatmeal and mix thoroughly; chill dough several hours. Roll out dough on floured surface to 1/8 inch thick. Use star cookie cutter; place 1/2 of star cookies on cookie sheet; top with 1 teaspoon jelly. Cut out center of other star cookies; place on top. Sprinkle with nuts, press lightly. Bake 375 degrees for 10 to 12 minutes. Use circles as double cookies with jelly in between; makes 55 to 60.
