SOUR DOUGH STARTER | |
4 peeled potatoes 2 c. flour 1 tbsp. sugar 1 tsp. salt Boil potatoes in water to cover. Mix 2 cups of the potato water (lukewarm), with flour, sugar and salt. Put mixture in crock, cover loosely and let stand in a warm place until it ferments, and has a sour odor. When ripe, store in refrigerator or freezer or use at once. Makes about 3 1/2 cups. To make more starter for future use. Add 2 cups of flour to remaining portion of starter and slowly add more water until it starts fermenting, then refrigerate or freeze for future use. |
