PUMPKIN CAKE 
CAKE:

2 c. sugar
2 c. pumpkin
4 eggs
2 c. flour
2 tsp. cinnamon
2 tsp. baking soda
1 c. salad oil
1/2 tsp. salt

ICING:

8 oz. cream cheese
1 tsp. vanilla
1 stick butter
1 box powdered sugar

Cake:

Mix all ingredients together. Bake 35 to 45 minutes at 350 degrees. Bake in a 13 inch long pan.

Icing:

Soften cream cheese and butter. Cream butter and cream cheese together and add vanilla and powdered sugar. Beat until creamy. (Note: If you don't want the cake to be so rich and sweet, you can cut icing recipe in half. Half would still be quite rich.)
