CORNED BEEF SALAD 
1 envelope unflavored gelatin
1/4 c. cold water
1 1/2 c. tomato juice
1 tsp. salt
1 (12 oz.) can corned beef, shredded
3 hard-boiled eggs, chopped
2 c. celery, chopped fine
1/2 c. cucumber, chopped
1 tbsp. onion, chopped
1 tsp. lemon juice
1 c. mayonnaise (lite, cholesterol, fat-free)

Soften gelatin with water. Pour into heated tomato juice. Add lemon juice, salt, and chill until slightly set. Fold in other ingredients. Put into 8x12 inch pan. Refrigerate. Cut into squares or spoon onto lettuce leaves.
