CORNISH HEN CHAMPAGNED 
2 Cornish hens
1 tsp. salt
1 tsp. white pepper
1/2 c. butter

Salt and pepper hens inside and out. Melt butter and baste hens in a medium poultry pan.

Bake uncovered at 350 degrees until tender and golden, about 30 minutes.

To serve: Stuff with island rice. Sprinkle on champagne to taste; toast 3 minutes.

Garnish: Champagne, cantaloupe, parsley, oranges.
