CINDY'S CARROT CAKE 
2 c. sugar
2 tsp. cinnamon
1/2 tsp. salt
1 1/2 c. vegetable oil
4 eggs
2 c. flour
3 carrots - grated
1 c. pecans - optional

Mix all ingredients, adding carrots last. Batter will seem too stiff until carrots are added. Bake at 350 degrees for 30 minutes.

ICING:

1 lg. cream cheese
1 stick butter
1 box confectioner's sugar
1 c. pecans
1 tsp. vanilla

Leave cheese out to get at room temperature. Melt butter, then cream both together. Add sugar gradually until mixed together, then add pecans and vanilla.
