SWEDISH MEATBALLS 
1/4 c. chopped onion
1 tbsp. butter
1 lb. ground beef
1/2 lb. sausage
1 tsp. salt
3 tbsp. flour
1 egg
1/4 c. light cream
1 can condensed beef consomme
Pepper to taste

Cook onions in butter until tender but not brown. Combine meats and seasonings, beat thoroughly. Beat in flour, egg, then cream and onions. Should be light and fluffy. Form mixture into 1 inch balls and lightly brown in a little more butter, shaking skillet to turn balls. Remove excess fat. Add consomme, cook uncovered 15 minutes. Good with mashed potatoes.
