RAINBOW COMPOTE 
1/2 c. honey
2 tbsp. lemon juice
1 tsp. shredded orange peel
4 oranges, peeled and sliced
1 1/2 c. blueberries
2 c. honeydew melon, cut in cubes
1 1/2 c. strawberries, cut in half

Combine honey, lemon juice, and orange peel. Mix and pour over orange slices. Cover and refrigerate overnight. Also chill the rest of the fruits.

Drain oranges, reserving the dressing. Arrange oranges on bottom of compote. Top with blueberries, melon cubes, then strawberries. Pour dressing over all.
