RICE WITH CHEESE AND TOMATO
PUREE
 
1 c. cooked rice
3 tbsp. oil
1 med. onion, chopped
3 stalks celery, chopped
1 green pepper, chopped
2 c. thick tomato juice or tomato puree
2 c. shredded cheese
1 tsp. salt

Saute 3 tbsp. oil, onion, celery and green pepper. Add to this your tomato juice or puree, cooked rice and cheese. Salt and pepper to taste, cover and simmer until cheese is melted. You may add other vegetables to your taste.
