CHICKEN KIEV 
4 boned & skinned chicken breasts
1/4 lb. butter
1 tbsp. chopped chives
1 c. plain bread crumbs
Toothpicks
1 tbsp. lemon juice
1 tbsp. salt
1 egg, beaten
Oil for deep frying

Blend together softened butter, lemon and chives. Divide into 4 balls and chill until hardened. Sprinkle chicken breasts with salt and pepper. Wrap chicken around hard butter balls and secure with toothpicks 2-3 each for piece. Dip into egg mixture and roll in bread crumbs. Chill 1 hour. Fry in deep fat 350 degrees for 10 minutes or until done. Serve immediately with rice and vegetable dish.
