REFRIGERATED BRAN MUFFINS | |
2 c. buttermilk 1/2 c. oil 2 eggs, beaten 2 c. bran flakes 2 1/2 c. flour 1 1/2 c. sugar 2 1/2 tsp. baking soda 1 tsp. salt 1/2 c. chopped and floured dates 1/2 c. chopped nuts 1 c. raisins In large bowl, combine first 3 ingredients and beat until well blended. Add rest of ingredients and stir until just moistened. Lightly spoon flour into measuring cup and level off. Put 1/4 cup flour aside to coat raisins and dates before adding to mixture. Fill muffin cups 3/4 full. Bake at 400 degrees for 15-20 minutes. Yields 2 dozen. Dough maybe mixed, covered and refrigerated for up to 6 weeks and bake as directed. |
