GLORIFIED RICE 
1 (9 oz.) crushed pineapple
2/3 c. pkgd. rice
2/3 c. water
1/2 tsp. salt
1 1/2 c. mini marshmallows
1 ripe banana, diced
2 tsp. lemon juice
1 c. heavy cream, whipped

Drain pineapple, reserving the juice. In saucepan, combine rice, water, juice and salt; mix just to moisten rice. Bring quickly to boiling; remove heat, cover and simmer 5 minutes. Remove from heat, let stand 5 minutes. Add marshmallows, pineapple, banana and lemon juice. Cool. Fold in cream. Chill. Makes 8 to 10 servings.
