1 c. butter 1 c. sugar 1 c. brown sugar 1 c. oil 2 eggs 1 tsp. vanilla 3 1/2 c. flour 1 tsp. cream of tartar 1 tsp. baking soda 1 tsp. salt 1 c. rice cereal 1 c. quick oats 1 c. coconut 1/2 c. pecans, chopped Heat oven to 350 degrees. Cream butter, sugars, and oil. Add eggs and vanilla. Beat well so oil will not separate. Add flour mixed with cream of tartar, soda and salt. Stir in cereal, oats, coconut and nuts. Drop by teaspoonfuls on ungreased cookie sheet, flatten slightly. Bake on lower shelf of oven 54-6 minutes. Move to the middle of oven and finish baking about 5 minutes. Watch carefully so they don't become too brown. Remove from sheets and cool. If a pan of cookies are ready to put on the lower shelf when the one already in the oven is moved to the middle shelf, baking will go faster. |
