WALNUT CHICKEN 
1 tsp. cornstarch
1 tbsp. water
1 egg white
2 lg. whole chicken breasts
3 tbsp. soy sauce
1 tbsp. bourbon
1/2 tsp. sugar
4 tbsp. oil
3 green onions
2 slices ginger, minced
1 clove garlic, minced
1/4 c. walnuts, chopped
Cooked rice

Mix cornstarch, water and egg white. Add chicken and toss until coated; set aside. Combine soy sauce, bourbon and sugar. Heat 2 tablespoons oil in wok. Stir fry chicken for 3 to 5 minutes or completely cooked. Remove chicken from pan. Add remaining oil and fry onion, ginger and garlic 1 minute. Add soy bourbon mixture and cook until thickened. Stir in walnuts. Combine with chicken. Serve with rice.
