HONEY PECAN CHICKEN | |
2 c. "Stove Top" stuffing mix (or any other brand) 1 c. orange juice 1/2 c. boiling water 1/3 c. chopped pecans 2 tbsp. butter 4 boneless chicken breast halves (flattened) 4 slices bacon 2 tbsp. honey Combine stuffing mix, 1/2 cup juice, water, pecans and butter and let stand 5 minutes. Mound 1/2 cup stuffing on each chicken breast. Wrap with bacon, twist to secure. Place in greased pan or microwave safe dish. Mix remaining juice and honey; spoon over chicken. Bake at 350 degrees for 40 minutes. Microwave: Cover with paper towel. Cook at high 14 to 16 minutes, rotate dish twice. Let stand 5 minutes. Makes 4 servings. |
