SPECIAL-K SALMON LOAF | |
1 can (15 oz.) salmon, drained, flaked 2 eggs, slightly beaten 1/2 c. milk 1/2 tsp. salt 1/8 tsp. pepper 1 tsp. lemon juice 1 tbsp. chopped onion 1 tbsp. green pepper 2 c. Kellogg's Special K cereal EGG SAUCE: 2 tbsp. butter 2 tbsp. all-purpose flour 1/2 tsp. salt 1 c. milk 2 tbsp. lemon juice 1 hard cooked egg, chopped Combine all of ingredients in medium size mixing bowl. Spread evenly in greased 9x5x3 inch loaf pan. Bake 350 degrees for 30 minutes. Serve with egg sauce. Sprinkle with paprika and parsley. Egg sauce: Melt butter over low heat. Stir in flour and salt. Add milk slowly. Stir until smooth. Increase to medium heat and cook until bubbly and thickened. Stir constantly. Before serving stir in lemon juice and chopped eggs. |
