SPINACH AU GRATIN 
2 (10 oz.) frozen spinach
3 oz. can mushrooms
3 tbsp. butter
3 tbsp. flour
1/2 c. chicken broth
1 c. milk
1 1/2 c. bread crumbs
1/2 c. sharp cheddar cheese

Cook frozen spinach according to package directions, then squeeze out water. Combine 3 tbsp. butter, 3 tbsp. flour, chicken broth and milk to make a cream sauce in a saucepan. In a casserole dish layer spinach mushrooms, cream sauce, cheese and bread crumbs. Then repeat layers once more. Place in 350 degree oven for 20 minutes.

This was so delicious! I could eat this every day. I changed a few things to make it low carb. I used 1/2 cup cream and 1/2 cup water. I used guar gum as a thickening agent instead of flour--about 3/4 tsp. and added spices--garlic powder, paprika, onion powder, and tyme. I sprinkled cheese on top instead of bread crumbs, to continue the low carb theme.
