CHOCOLATE ZUCCHINI CAKE | |
1/4 c. butter 1/4 c. shortening 1/2 c. vegetable oil 1 1/2 c. sugar 1 egg 1 tsp. vanilla 1/2 c. sour milk (add 1 tbsp. vinegar or lemon juice to milk and let stand a few minutes.) 2 1/2 c. flour 4 tbsp. cocoa 2 tsp. baking soda 2 c. shredded zucchini 12 oz. chocolate chips Cream first 4 ingredients together in an electric mixer. Add egg, vanilla and sour milk. Mix well. Sift dry ingredients and add. Mix in zucchini last. Spoon into greased and floured 9 x 13 inch pan and sprinkle with chocolate chips. Bake at 325 degrees for 45 to 50 minutes. Serve as is or add favorite frosting. |
