HEARTY VEGETABLE SALAD | |
1 red onion, sliced 1 carrot, thinly sliced 1/2 tsp. garlic salt 3 tbsp. plain low-fat yogurt 8 new potatoes, boiled, quartered 4 hard-boiled egg whites, sliced 4 tbsp. fresh parsley, chopped 1 stalk celery, sliced 2 cucumbers, sliced 1/4 tsp. pepper 1/2 tsp. salt 1/4 tsp. paprika 1/2 tsp. salt 4 tbsp. lite mayonnaise Combine all ingredients and toss gently so the shapes of the vegetables and egg whites will remain intact. Makes 10 servings. 72 calories each. |
