SPAGHETTI SAUCE 
1/2 bushel tomatoes
4-6 hot peppers
8 green peppers
16 onions
2 bunches celery
1 c. Real lemon
1/2 c. salt
1 c. sugar
6 tomato paste (optional)
Garlic (optional)

Grind, mix, cook until thick. Add 1/2 cup sugar, 1 cup vinegar, about 1/2 hour before bottling. Cold pack 1/2 hour to 45 minutes.

I generally put garlic, 1 tablespoon oregano, and tomato paste in when preparing (small can Contadina).
