FIELDSTON LOWER SCHOOL'S DESSERT
PANCAKES
 
2 c. flour
4 eggs, separated
1/2 tsp. salt
3 c. milk (approximate)
butter for cooking

Mix flour, salt and milk. Slowly add the milk so that there are no lumps. Add egg yolks and mix. Beat the egg whites and add the pancake mixture. Stir. Heat a little butter in a frying pan. Pour a little batter into it. Tilt the pan to spread the batter. When the pancake is nicely brown, flip to the other side. Brown the other side.

Fill with applesauce, roll up and sprinkle with cinnamon-sugar or eat with lemon juice and sugar or eat with maple syrup.
