LOW FAT CHEESECAKE 
1 lb. low fat cottage cheese (16 oz.)
1 (20 oz.) can crushed pineapple, reserve juice
4 tsp. sugar or 3 packs of Sweet 'n Low
2 env. Knox unflavored gelatin

Blend cottage cheese, pineapple, sugar or Sweet 'n Low in food processor or blender.

Take reserved juice and 2 envelopes gelatin and heat on stove for approximately 3 minutes. Pour the heated juice into mixture in blender and blend again until smooth.

Pour the mixture into a spring form pan or pie plate lined with crushed graham cracker crumbs. Then chill for at least 4 hours.

If desired, you can spread a can of any flavor pie filling on the top.
