COWPOKE CORNBREAD 
1/2 lb. hamburger or sausage, saute and drain
1/2 lb. Cheddar cheese, grated
1 lg. onion, chopped
3 or 4 jalapeno peppers, seeded
1 can cream corn
1 1/2 c. yellow cornmeal
1 tsp. salt
2 eggs
1/2 tsp. baking soda
1 c. milk
1/2 c. salad oil

Grease large cast iron skillet, sprinkle with a little cornmeal, then brown and set aside. Mix thoroughly cornmeal, eggs, milk, salt, soda, salad oil and corn. Pour less than half of batter into skillet. Then spread on cheese, onion, peppers and meat. Cover completely with remaining batter. Bake at 350 degrees for 45 minutes or until center is firm.
