RHUBARB BARS | |
3 c. rhubarb 1/4 c. water 1 1/2 c. sugar 1 tsp. vanilla 2 tbsp. cornstarch 1 1/2 c. oatmeal 1 1/2 c. flour 1 c. brown sugar 1/2 tsp. baking soda 1 c. shortening 1/2 c. nuts Combine first 5 ingredients above, cook until thick. CRUST: Stir together oats, flour, brown sugar and soda. Cut in shortening. Place 1/2 of crumb mixture in bottom of 9"x12" pan. Pat down. Spread rhubarb filling over top and sprinkle with remaining crumbs. Bake at 350 degrees for 30 minutes. |
