MOCK MEATBALLS IN GRAVY 
3/4 c. ground nuts
1 med. onion, minced
1 tsp. poultry seasoning
2/3 c. low fat or dry cottage cheese
1 lg. garlic clove minced or 1/8 tsp. garlic powder
3 tbsp. fresh minced parsley
2 eggs or 1 egg and 2 whites

Combine all ingredients; form into walnut size balls. Place on cookie sheet and freeze until rock hard. Place meatballs into casserole dish that contains hot gravy. Bake, covered, 350 degrees, 45 minutes.
