RAGU D'PATAT 
1/4 c. vegetable oil
2 c. chopped onions
3 pieces garlic, chopped finely
3 c. sliced smoked sausage
5 c. diced potatoes
3-4 c. water
2 tbsp. Tony Chacheres' Creole Seasoning
1 tsp. Kitchen Bouquet browning & seasoning sauce
Salt & pepper to taste

Place oil, onions, and garlic in heavy 5 quart covered saucepan or Dutch oven. Cook over high heat until onions are thoroughly browned, stirring frequently. Add sausage and continue cooking over high heat until browned. Add potatoes and enough water to cover potatoes. Add Tony Chacheres' Creole Seasoning and Kitchen Bouquet browning and seasoning sauce. Bring to a boil and reduce heat. Simmer 30 to 45 minutes (until potatoes are tender), stirring occasionally. Serve over steaming rice.
