CHILI CON CARNE 
1 1/2 red chili beans or 1 #2 can (2 1/2 cups) kidney beans
1 large onion, sliced
1 chopped green pepper
1 lb. ground beef
3 tbsp. fat
1 #2 can (3 1/2 cups) tomatoes
1 1/2 tsp. salt
1/8 tsp. paprika
1/8 tsp cayenne pepper
3 whole cloves
1 bay leaf
1 to 2 tbsp. chili powder

If using chili beans, soak overnight. Cook in boiling, salted water until tender. Brown onion, green pepper, and meat in hot fat. Add tomatoes and seasonings. Simmer 2 hours, adding water if necessary. Add beans, heat thoroughly.

Serves 6.
