RHUBARB COFFEE CAKE | |
1/2 c. butter 1 1/2 c. sugar 1 egg, beaten 2 c. flour 1 tsp. baking soda 1/2 tsp. salt 1 c. buttermilk or sour milk 2 c. chopped rhubarb 1 tsp. vanilla Cream butter and sugar, add egg. Sift in flour, soda, salt and milk. Blend in gently rhubarb and vanilla. Pour into 9 x 13 inch pan. Sprinkle top with 1/2 cup sugar and 1/2 teaspoon cinnamon. Bake at 350 degrees for 45 minutes. |
