RHUBARB COFFEE CAKE | |
1 1/2 c. sugar 1/2 c. Crisco 1 tsp. vanilla 1 egg 1 tsp. baking soda dissolved in 1 c. sour milk or buttermilk 2 c. flour 1/2 tsp. salt 2 c. finely chopped rhubarb & floured using some of the 2 c. flour above Sour milk - Sour by putting 2 tablespoons lemon juice in a cup measure and fill with milk. Let stand 5 minutes. Mix the above in order given. Pour in a greased and floured 9 x 13 x 2 inch pan or two pans 8 x 8 inches. Put this topping on before baking: 3/4 c. sugar 3 tsp. butter Crumble and sprinkle over coffee cake. Bake at 350 degrees for 35-40 minutes. |
