POTATO SALAD 
1 med. onion (grated)
2 tsp. garlic powder
1/2 tsp. salt
pepper

Place in bowl. Fry up 1/4 pound of bacon very crisp. Drain off all bacon fat from pan. In same pan, bring 3 tablespoons red vinegar to a boil. Pour hot vinegar over onion mixture, then let sit. Cook peel and cut up 3 pounds of potatoes. Add to potato chunks, 1 1/4 cup mayonnaise and 2 tablespoons yellow mustard and 1 tablespoon spice mustard. Add potatoes to onion mixture and mix. Add crumbled bacon. Mix well. Chill. Better if made a couple days ahead of time.
