FANCY EGG SCRAMBLE 
2 tbsp. butter, melted
2 tbsp. flour
1/2 tsp. salt
1/8 tsp. pepper
2 c. milk
1 c. (4 oz.) American cheese, shredded
1 c. (4 oz.) Canadian ham, diced (could use ham)
1/4 c. green onions, chopped
3 tbsp. butter
12 eggs, beaten
3 oz. mushroom stems and pieces, drained

TOPPING:

4 tbsp. butter
1/8 tsp. paprika
1 c. (3 slices) bread crumbs

Melt butter; blend in flour. Add milk and seasonings. Cook and stir until bubbly. Stir in cheese until melted. Set aside. In large skillet, cook bacon and onion in butter until onion is tender but not brown. Add beaten eggs and scramble. Cook until just set. Fold mushrooms into cheese sauce. Mix together egg mixture and cheese sauce. Pour into a greased 9 x 9 inch dish or a 9 x 13 inch dish.

Make the Topping. Bake, uncovered, at 350 degrees for 35 minutes. This can be made the night before and refrigerated or it can be frozen. Serves 12-15.

Topping: Combine ingredients and sprinkle over eggs.
