SPICY TURKEY CASSEROLE 
1 (20 oz.) can chunk pineapple
1 c. sliced celery
1/3 c. sliced onions
1 c. sour cream
1 c. shredded cheddar cheese
2 tbsp. butter
1/2 c. diced green pepper
3 c. hot cooked rice
2 c. diced turkey

Drain pineapple. Heat butter in skillet. Saute celery, green pepper and onions until soft. Set aside. Mix rice and sour cream. Spoon one third of the rice mixture into a greased 2 quart casserole dish. Layer one half each pineapple, sauteed vegetables and turkey. Repeat layers ending with rice mixture. Top with cheddar cheese. Bake in 375 degree oven for 35 to 40 minutes until heated through. Makes 4 to 6 servings.
