SPICY SPINACH CASSEROLE 
2 pkgs. frozen chopped spinach
4 tbsp. butter
2 tbsp. flour
2 tbsp. chopped onion
1/2 c. evaporated milk
1/2 c. liquid from cooked spinach
1/2 tsp. black pepper
3/4 tsp. garlic salt
3/4 tsp. celery salt
1 tsp. Worcestershire sauce
1 (6 oz.) Monterey Jack jalapeno cheese

Cook spinach according to directions on package. Drain, reserving 1/2 cup liquid.

In a pan, melt butter. Add flour and stir until smooth. Add onion and cook until tender. Add liquid slowly, stirring constantly. Cook and stir until smooth and thick. Add seasonings and cheese, stir until cheese melts. Combine mixture with spinach. Prepare a day in advance and refrigerate. Bake at 350 degrees until bubbly.

I have been making this casserole for the past 5 years. It is highly requested and voted best casserole dish every year. Make it 3 times a year, work potluck, Thanksgiving dinner and Christmas Dinner. Very good with a very tad hint of spice.

I've been making this dish for about 20 years. It's a holiday favorite in our family. I like it spicy, so I add a little tabasco to the sauce. To make it even better, top it with Ritz crackers crushed and melted butter on top! It's a crowd-pleaser!
