SPICY SPINACH CASSEROLE | |
2 pkgs. frozen chopped spinach 4 tbsp. butter 2 tbsp. flour 2 tbsp. chopped onion 1/2 c. evaporated milk 1/2 c. liquid from cooked spinach 1/2 tsp. black pepper 3/4 tsp. garlic salt 3/4 tsp. celery salt 1 tsp. Worcestershire sauce 1 (6 oz.) Monterey Jack jalapeno cheese Cook spinach according to directions on package. Drain, reserving 1/2 cup liquid. In a pan, melt butter. Add flour and stir until smooth. Add onion and cook until tender. Add liquid slowly, stirring constantly. Cook and stir until smooth and thick. Add seasonings and cheese, stir until cheese melts. Combine mixture with spinach. Prepare a day in advance and refrigerate. Bake at 350 degrees until bubbly. |
