SPICY ZUCCHINI CASSEROLE 
1 lg. or 2 med. or 4 to 5 sm. zucchini, sliced
1 1/2 med. onions, chunked
5 or 6 tomatoes, diced
1 tbsp. chili powder
salt, pepper and garlic powder to taste
1 1/2 to 2 lb. hamburger, cooked and drained
1/2 lb. American cheese (or Velveeta)
Parmesan cheese

Cook zucchini and onion in large skillet until tender. Drain liquid. Add tomatoes, cook about 15 minutes. Sprinkle well with garlic powder; add chili powder, salt and pepper. Add hamburger. Mix well. Put in large casserole dish. Top with cheese (either sliced or diced), then sprinkle with Parmesan cheese. Bake until cheese is melted, about 20 to 25 minutes at 325 degrees. Makes 8 servings.
