Select even size potatoes (as many as you think you will need). Wash and cook them in salted water until they are almost done. Peel and cut in halves. Put in pans. Cover with butter; cover with brown sugar, sprinkle with cinnamon then cover with honey. Have pineapple juice handy and pour into pan to cover. Put in oven and let come to a boil and when potatoes are brown on top, they are done. (Got this recipe from my mother-in-law and have used it for 40 years.) |
