TOMATO - APPLE RELISH | |
3 med. onions, peeled & quartered 4 med.-lg. tart apples, cored & cut in eighths 1 outer stalk of celery, cut in pieces 2 1/2 c. white vinegar 3/4 c. seedless raisins 2 tbsp. mustard seed 1 tbsp. ground ginger 2 oz. candied or preserved ginger, cut or chopped finely 3 c. firmly packed brown sugar 1 tbsp. salt 4 lg. ripe tomatoes, peeled, cored & cut in eighths 1 sweet red pepper, minced Force first 3 ingredients through coarse blade of food chopper. Put in kettle with remaining ingredients, except pepper. Bring to a boil and simmer 1 3/4 hours uncovered, stirring frequently. Add pepper and simmer, stirring very frequently, about 15 minutes longer. Pour into hot, sterilized jars and seal. Makes 3 to 4 pints. |
