MY SISTER FERN'S SOUR CREAM
ENCHILADAS
 
2 c. sour cream
1 c. green onions, chopped
1 tsp. cumin
1 can enchilada sauce
1 lb. Longhorn cheese, grated
1/2 lb. Jack cheese, grated
1 dozen corn tortillas

Mix sour cream, onions, half of each cheese, and cumin for filling. Quick fry tortillas and dip in enchilada sauce. Place filling on tortillas and roll. Place in 13x9 baking dish. Cover with sauce and remaining cheese. Cover with foil and bake at 350 degrees for 15-20 minutes.
