YAM SUPREME 
This is from a recipe book called "Recipes for Summer Days".

4 lbs. cooked yams, peeled (approximately 2 c.)
1/4 c. butter, melted
3 tbsp. heavy cream
2 tbsp. brown sugar
1/4 tsp. cinnamon
1/4 tsp. allspice
1/4 tsp. salt
1 egg
1 (13 1/2 oz.) can pineapple chunks packed in own juice, drained (reserve juice)
3 ripe bananas, peeled and sliced
2 tbsp. honey
1/4 c. orange juice
1/3 c. sweetened coconut flakes

Heat oven to 350 degrees. Rice or mash yams. Beat in melted butter, cream, brown sugar, spices, salt and egg. Spread potato mixture in bottom of well greased 1 1/2 quart shallow baking dish. Top with a layer each of pineapple and bananas. Mix honey, orange juice, and 1/4 cup reserved pineapple juice; drizzle over potatoes and fruit. Bake uncovered in oven for 15 minutes. Sprinkle with coconut flakes, completely covering fruit. Return to oven and bake for 15 minutes or until coconut is golden brown.
