HERE'S THE BEEF 
2 lbs. beef round skirt (any of your cheaper cuts of meat work just as well), cut into bite size pieces
3 (10 3/4 oz.) cans cream of mushroom soup
1 lb. fresh mushrooms (cans will do fine)
1 soup can sherry
1 env. Lipton's dry onion soup mix
Parsley

Combine all ingredients in casserole. Cover and bake 3 1/2 hours at 325 degrees. Serve over rice or egg noodles.
