SUPER DENVER OMELETTE 
4 eggs (lightly beaten)
1/2-3/4 c. bite-size pieces of ham
1/2 c. chopped onion (or green onion)
1/3 c. chopped green pepper
3/4 c. shredded Cheddar cheese
3/4 c. chopped tomatoes
2 tsp. butter (butter)

Lightly saute butter, onions, ham and green pepper. Add eggs and cook until almost done in a large frying pan. Sprinkle cheese over top of eggs as they start to harden. At the last minute, sprinkle the tomatoes over the top. When warm serve with toast or muffins. Salt and pepper to taste.
