RAW APPLE CAKE 
4 c. grated raw apples (any kind, peeled or unpeeled)
2 c. sugar
2 eggs
1/2 c. oil
2 c. flour
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
1 c. chopped walnuts

Sift together flour, soda, cinnamon and salt. Add to apples, sugar, eggs, and oil. Add nuts. Pour into greased and floured oblong cake pan. Bake at 350 degrees for 35 to 40 minutes.

I used two cups of Splenda (big bag made for baking) in place of the sugar and made large muffins, which baked for exactly 25 minutes. Moist and delicious!!! Next time I think I will go with 1/2 tsp. salt as I think that would have been sufficient.
