SWEET POTATO PUDDING 
2 lg. sweet potatoes
1 1/2 c. sugar
1 c. marshmallows
1/2 stick butter
1 c. milk
2 med. size eggs

Cook potatoes until done; peel and mash well. Add marshmallows, sugar and butter. Beat the eggs and add milk and nutmeg. Add to potato mixture and stir together. Pour into greased casserole and bake slowly at 325 degrees until done, about 40 minutes or when it doesn't shake when moved on rack. Can be used as main dish or dessert.
